Cling vs. Freestone

Have you heard the words clingstone or freestone when referencing types of peaches? Peaches are classified as "stone fruit". Instead of having small seeds like apples they have a large hard stone-like pit with one seed inside. Depending on the peach variety, the flesh of the peach will either release from the stone or stick to it. If it sticks it's considered a cling variety and if it releases easily it's considered a freestone. Early varieties are typically clings and mid to late varieties are freestones. Freestone can also be referred to as openstones. There are some varieties that are semi-cling, meaning it's hit or miss if they come off the stone easily; this is usually due to ripeness or weather related.

White vs. Yellow

White and yellow are terms used to described the color and taste of a peach. White peaches have a lighter paler color whereas a yellow peach has the typical golden yellow color. As far as taste, white peaches are sweeter and less acidic and yellow peaches are sweet with tartness due to the acidity level. It's a purely personal decision on which variety you choose. They can both be used for eating fresh with cottage cheese, or on a salad. They are perfect for smoothies, juicing, or ice cream. They are good for vinaigrettes or dressings and of course are perfect for cobblers, pies, jellies, and jams. Have you tried grilling them for a smoky caramelized flavor?
